Any common system font parses fine, because parsers read the text layer, not the letterforms. Font problems are human problems: tiny sizes and ornate scripts slow down a reader who was only giving you a first scan of about 7 seconds anyway. Pick something plain and readable, then stop thinking about fonts.
The parsing scare stories about fonts confuse two different failures. Text set in a normal font is extracted the same regardless of typeface; what breaks extraction is text that is not really text, like words baked into images or trapped in decorative containers.
Choose for the skimming human instead. A standard font at a comfortable size, with real white space, lets a recruiter locate your title and results inside the first scan. If a font choice makes anyone squint, it is costing you seconds you do not have.
